Chardonnay
Liberty School Chardonnay (California). Chardonnay with a small percentage of Viognier blended in for some brightness and aromatics. It has tropical aromas of pineapple and melon followed by bright citrus notes and green apple. It's full-bodied, fruit driven, and finishes clean.
Flora Springs Chardonnay (California). It is 100% Chardonnay from Carneros. The wine has intense character and a fragrant, tropical note of peach and pear.
Distant Bay Chardonnay (California). This 100% Chardonnay is from the Monterey County appellation (wine-speak for the region recognized as an American Viticultural Area). Its bright, vibrant characters of nectarine, peach, and apricot are indicative of Monterey County.
Merlot
Hawk Crest Merlot (California). Typical of good Merlot, it displays great dimensions of blueberry, plum, black cherry, anise, and dark chocolate. This noteworthy wine is rich, silky, textured, and the finish is legendary.
Red Diamond Merlot (Washington State). This Merlot is blended with some Cabernet Franc and Cabernet Sauvignon to give it some "structure" and "edge". Aged in French and American oak, it's a very balanced wine that shows bright fruit, lush tannins (the mouth filling component), and nice acidity.
Cabernet Sauvignon
Hess Select Cabernet Sauvignon (California). It is 85% Cabernet blended with traditional Bordeaux "varietals" from selected vineyard sites in California. It brims with raspberry and black cherry notes, backed by cedar and spice from French oak.
Wild Horse Cabernet Sauvignon (California). The blend is 90% Cabernet, 5% Malbec, and 5% Merlot. It is full-bodied, with chewy tannins and aromas of cedar, lavender, sage, black cherry, blackberries, clove, and cinnamon.
Canyon Road Cabernet Sauvignon (California). It is primarily cabernet from selected vineyard holdings. It is also blended with traditional Bordeaux "varietals" such as Merlot, Cabernet Franc, and Malbec. The wine is complex with aromas of blackcurrant, berries, plum, chocolate, and spice. It's balanced by "velvety" tannins, and oak aging provides suble smokiness and vanilla characters.
Shiraz
Tintara Shiraz (Australia). This 100% Shiraz (or Syrah) is grown on 70-year-old vines from the famous McLaren Vale growing region in South Australia. It has a generous taste profiled with bold, dark fruits, blueberries, and plum. It is accented by spice and cedar from barrel aging.
Champagne
Mumm Brut Prestige California. There are more than fifty different vineyard selections (or "cru's" as they say in France) in this "cuvee" (blend). Brut is usually the "house style" and tends to be on the drier side. This particular variety boasts a beautiful rose petal aroma with hints of vanilla and melon, balanced with firm acidity and structure.
Laurent Perrier, Brut LP (France). It features more than 55 different "cru's" in the final blend, all of which are from the Champagne region of France. This particular cuvee is medium bodied with subtle hints of spice, citrus, acidity, and warm toasty notes.
